    pork is safe at 145 according to the dept of health temps above the safe temp change the texture 165 -175 slice 175 - 190 chop\pull mostly chop 190+ pull most of the bbq ive eaten in my life has been chopped 175 ish degrees just depends on how you like it

    i already did some mods on it i put the smoker legs on backwards (on the outside) add added some legs to the fire pan so i can pick up the unit off the fire pan this should make tending the fire a bit easier than trying to work through the little axcess door off i go hopfully pics tonight

    im going to stuff some chicken breast with goat chese sundried tomatoes and spinich wrap them in baccon (hopfully this will keep them from drying out) im also going to throw on some wings i need a snak since this is the first ecb smoke any suggestions would be appreciated how much or little...

    butter will add shine and richness without effecting the taste to much also think sugar glaze honey ect... i dont do any comps but this makes sence to me just my.02 worth

    the class has put on by the health department for my church back in tampa the church has a pre-school and prepares lunch for the students every day it was one of the requirements by the health dept. to be certified for food serrvice sorry that there is no link smokebuzz

    according to the food safty class 145 is safe to eat you will still be able to slice if you go up to 165 175 and you may "feel" safer hope this helps as for injections try bbq sause if you have a favorite make a marinade you like and put it in the blinder cajun injector is always easy and good
