Adding Charcoal in the Wood Pan

I never smoke without charcoal.  Follow the advise from Eric: 2) For added flavor, as there is a noticable difference between chacoal fired and propane fired smokes, IMO. In this case, I keep the smoke wood(s) seperate from the charcoal unless I need extra heat to get the smoke wood started...

How many ribs can I fit in a GOSM Big Block

I have a BigBlock and 5 shelves. I did 14 racks (beef) yesterday and had room for 4 more. So, you might be ok with 18 racks IF YOU BUY ONE MORE SHELF.

    GOSM...Lump coal...wood chips????

I use the brick ON TOP OF THE BURNER. Then I place the cake pan on the brick. This brings the pan in contact with the flame. This helps to burn the coals properly. Otherwise, the coals were dying out. Hope that helps... I think you were reading too much into my post. That's the problem...

    GOSM...Lump coal...wood chips????

I don't use the cast iron pan that came with the smoker. It's too thick for charcoal to light up. I use a smaller (8x8) cake pan. Works great. Also, I put a small (4x4) interlocking brick right on top of the burner and put the cake pan right on top of the brick. I take out the pan every hour...

    Charcoals added to Wood chips?

Let's just say, there's no replacement for charcoal smokers... I gotta have charcoals in the propane one, wood along doesn't cut it. Cheers.

GOSM BB, first smoke, not happy

It was a full packer... but I think I trimmed a bit much. Next time, not trimming at all. Here is question... why do you have to wait till the internal temp is around 160-170 before wrapping? Does the meat not get smoke flavor within the first 2-4 hrs? Just wondering if I should just smoke...

GOSM BB, first smoke, not happy

Guys, I am almost ashamed to admit my mistake here... lol. I now remember cranking up the smoker temp upto 350+ after wrapping. No wonder it went up that fast internally. My bad. You know what that means... gonna have to smoke again next weekend I am not relying on the smoke thermo... even...

GOSM BB, first smoke, not happy

Hello, I tried my second smoke today. This time I put a cake pan instead of the chip pan that came with the smoker. Also, I put a small (4x4) brick directly on top of the burner then put the cake pan on top of the brick. The charcoals lit up completely this time. I did a brisket this...

GOSM BB, first smoke, not happy

Just when I thought I had it all... propane bbq, charcoal smoker, charcoal grill, propane smoker, portable grills... you had to remind me that I don't have a chimney starter...lol. I just cranked open the vents on both sides to get some air in there, hoping the coals might light up. The very...

GOSM BB, first smoke, not happy

Hi Guys, I have been smoking for a couple of years with a charcoal smoker and love the taste. However, I would smoke for 4 or so hrs in the smoker then finish it off in the oven inside. Wife does not like the smoke smell in the house too much, so I decided to get a propane smoker so I could...
