I never smoke without charcoal. Follow the advise from Eric:
2) For added flavor, as there is a noticable difference between chacoal fired and propane fired smokes, IMO. In this case, I keep the smoke wood(s) seperate from the charcoal unless I need extra heat to get the smoke wood started...
I use the brick ON TOP OF THE BURNER. Then I place the cake pan on the brick. This brings the pan in contact with the flame. This helps to burn the coals properly. Otherwise, the coals were dying out. Hope that helps...
I think you were reading too much into my post. That's the problem...
I don't use the cast iron pan that came with the smoker. It's too thick for charcoal to light up. I use a smaller (8x8) cake pan. Works great.
Also, I put a small (4x4) interlocking brick right on top of the burner and put the cake pan right on top of the brick.

It was a full packer... but I think I trimmed a bit much. Next time, not trimming at all.
Here is question... why do you have to wait till the internal temp is around 160-170 before wrapping? Does the meat not get smoke flavor within the first 2-4 hrs? Just wondering if I should just smoke...
Guys, I am almost ashamed to admit my mistake here... lol. I now remember cranking up the smoker temp upto 350+ after wrapping. No wonder it went up that fast internally. My bad.
