    Ok, filled the firebox, lit it, filled the pan with hot water and will try to burn it off. All vents are open, just a shame I have nothing ready to smoke. I still love the WSM and will refrain from fruit juice.

    Get yourself a Maverick remote monitor and use it. Covers both meat and smoker temp. Do not count on the MES gauge, a mistake I learned early off.

    Going into a wet brine, Have only caught one 50 pounder but the wife at one time was a commercial fisher person and have caught more than we could count. Shoulder is healing but it is amazing how much you use your strong hand once it is out of the picture
