    Chile, I can't imagine doing an overnighter anymore. Consider planning brisket for dinner, sleep in until 0900, drink coffee, watch the news, leisurely start your fire, cook your brisket and have dinner on the table for 1800. That's living the dream.     MES 40 worked just fine! That's pretty much the only bright spot to this cook. I tried using straight hickory pellets in the cold smoker and it put a terrible funk on the ribs and beans. Oh well, live and learn. The tater salad was good though.

    As a matter of fact this one came from Sam's club. Actually the wires did appear corroded rather than burned off. Bought this one in August last year. I just replaced the connectors but if it gives me any mire grief I'll replace the wires also. Got it smokin right now with ribs and beans.

    I always try to keep 2 or 3 butts in the meat freezer. Never know when i might want to make sausage or pulled pork, Can;t pass them up at that price. Probably get a couple more this weekend.
