    Considering upgrading to a Cookshack

Yeah, need has little to do with this.  I've done some great que on the MES, but I just feel it's not going to hold up much more than another year, and I think this would be a perfect birthday present :) Best part is the wife is fine with it.

Next round with Brisket. What a difference there is between Select and Choice (qview)

I'll try that test next time, usually I double check the temp with my dial therm, and I can usually tell by that if they are tender.  I wish I could fit the whole packer on those tiny racks :)  What I've done lately is I put an extra drip pan under the flats to catch the liquid and use that for...

Next round with Brisket. What a difference there is between Select and Choice (qview)

Last month I posted pix of the 3 USDA choice Briskets I smoked in my MES.  They were amazing.  Last weekend I had another three to do, and was a bit disappointed that I couldn't find the Choice level I had found last month, as Smart and Final only had Select.  Good price at $2.19/lb, but I'd of...

    Brisket seperation question

q-view tomorrow, however all I had time to snap was a picture of the first flat I pulled.  I now fully understand the allure of the "burnt ends".  Everything came out per calculations, though the points were a bit slower than the weight suggested.  So the full monty of what transpired: 8:30pm...

    Brisket seperation question

ah, didn't know it was cooler on one side.  I have a 30",  the grates are about 12x15 inches, and the full packers were about 21-22 inches I now have the flats down to 14 inches, and I should be able to get two points on one grate

    Brisket seperation question

I've got a large party coming up this saturday, and I want to make sure I've got things figured out before it's irrepairable.  First off, since I have an MES, I do have a bit of space consideration, and silly me bought three very nice looking13.5 lb packers.  After a tape measure, I realized...

Best pastrami so far with q-views

There are always those times where you kick yourself for not buying more of something.  Back at st. patties day sales the local Smart and Final had these huge corned beef briskets (about 9lbs a piece)  Not sure how they would be, I bought one.  Today I am kicking myself.  The brisket was lower...

Brisket and more brisket (strami style) w/Qview

That's great to know. The last pastrami I did was with points, as that was all that was left after patty's day. They're dirt cheap during that holiday.

Brisket and more brisket (strami style) w/Qview

I had taken some of the trimmed fat from the brisket and put it with some beef broth and apple juice in the drip pan, used that to baste the brisket. I'll try foiling it and letting it go further next time. I was trying to keep it slice-able. Oddly enough, I've found the brisket moister and...

Brisket and more brisket (strami style) w/Qview

Been a while since I've posted, mainly because I usually forget to take pix :) Almost did that this time, till the 5am mark. Started out with a 12 lb packer that I cut into the flat and point. Used the "special" rub from here and let set for about 12 hrs. Started those at midnight Friday...
