    I use a dual-probe thermo for briskets (I'm anal that way) and use a pan. Bbally is correct on the pan...you get a lot of great juice that way to use for dipping or whatever else you like, after skimming the fat off, of course.

    Welcome to SMF...I like to do brisket in a roaster pan with the wire grate. That way you get all the juice from the drippings (and if you refrigerate it, you can skim off the fat easily and add a whole lot of flavor to the meat when you serve).

    I picked up a couple regular roaster pans @ KMart on clearance for $5 each, with racks, and they're the same size as those big foil pans. I lined with foil and used them on some spares and beef. My question is, put the ribs on the racks over the liquid, or let the ribs lay straight in the liquid?
