Been away for a while.
Currently using a MES electric with the Amazn pellet system. It has the remote to monitor temps etc. it was a big step up from the electric bullet I had before.
It works great but even with the amazn pellet tray I’ve had flare ups all the pellet rows burning...
Applied a rub 12hrs before smoking
1cup brown sugar
2tbls garlic salt
2tbls onion powder
2tbls dry mustard
3tsp cayenne pepper
2tsp black pepper
2tsp salt
also used yellow mustard to help rub stick.
after internal temp hit 100* I sprayed every hour with:
1 1/2 cup apple juice
4oz Bacardi...

I work in a lab and we have lots of instruments that have to have very accurately regulated temperatures.
We use type J and K thermocouples of various lengths and diameters. These are quite robust and last for a long time even in 1000*F high moisture highly acidic enviorments.
