The only mod is the installation of an el cheapo 18" economy fireplace grate, from amazon, to allow better air flow in the firebox.

Lowes has a steel chip box for about 10 bucks ... fill er up with chips and one box is all you really need ... but it depends on your taste requirements. I use the chip box when I wish to mix woods such as apple - maple or red oak - cherry ... that being said I don't use chips, chunks or pellets...
Thanx for the reply Cowgirl ... I knew about the mayo sauce but what I had was definitely not mayo based ... it was either roux or cornstarch ... I have attempted to recreate something like it but have not gotten it right yet.
The closest I have come was making a thin gravy with bacon fat...

Back in the 60's I had Q in a joint in Fayetteville, the sauce was a white, peppery, vinegar concoction that was not a gravy but appeared to have a roux base. I have searched far and wide and can not seem to find...
