Good evening y'all!I got a rib roast from Costco. 6 lbs. for 15 bucks.
Seared it on my grill both sides.
Put it on the smoker for 4 hours. Smoked it on the ECB with some mesquite lump and alder chips.
Loaded up some portobellas with some penne pasta in a garlic sauce, topped with cheddar...
smoked taters coated in olive oil and sprinkled with coarse salt. smoked with cherry and a bit of hickory. 2hrs on my ecb no mods.

smoked an onion while I was at it.....smoked 1 hr. outer paper skin left on throughout smoke.
added onions and mashed with bits of the skin...
Anybody smoke rabbit? Wanna try some if we bag some, this bird season. Here in the So Cal. desert area, that's about as big as the wild game gets ...for the table anyhow. Any suggestions would be appreciated! Thanks

We have this awesome "supper" from time to time. Italian tortellini w/ meat sauce...some sausage. cooked all day in the slow cooker. let me share a "stew view" with ya first.......

Has anyone heard of using olive wood for smoking? I only imagine that it is a hard wood. I have got a hot source for all the trunk wood I could want. Any info is appreciated.

When using a digital temp probe inserted into a potato, do you use the same potato the entire duration of the cooking? I understand the temp would change if swapped out. The integrity of the potato seems to diminish through the hours.
