    Koch Commercial Smoker

I just ran across this Koch smoker and vacuum sealer for sale.  What are they worth.  Does anyone have any experience with either of these?

    Pastrami and Beef Plates

I've always used a packer when making pastrami but Rytek also mentions using Beef Plates. What are beef plates and how do they compare to brisket.

    Apprentice from Scott Valley

Welcome Brew Dude. SMF is a great place with great people. I used to work in Sawyers Bar and Petersburgh back in the 80's and would occassionally visit the "rock Chapel" at Corrigans on the weekends. One you get your smoker going send us some Q-view.

    Madrone, Tan Oak, and Pepperwood

All three are hardwoods found in parts of California. Madrone is incredible firewood with red paperlike bark. Tan Oak was used for tan bark (makes lots of ash in the wood stove) and pepperwood is also referred to as bay or Oregon myrtle.
