    Agree with the posters above. No real downside to the freezing flavor-wise, so long as vacuum-packed. I liked the steamed results the best, but crock pot is a great way to control the heat while it comes up to temp. Good luck 13spicerub!

    I have both the ECB and kettle. Highly recommend the kettle for multi-use. When finished grilling, I shut the top and bottom vents to save on coals. Good luck.

    Yep, I learned from Alton Brown when he was doing his Chimney Tuna Loin but I have since adapted it filet mignon, thick chops and turkey loin, among others.
