Okay, thanks everyone. I was afraid that was the answer. Sure would be a lot better if it were cooler but I'll try to jump on it in the next few weeks.
I was able to score some pecan from a coworker. Do I need to split it while it is green or can it be split after it has been seasoned? I will be doing it by hand as I do not have a log splitter.
I found out the hard way with some oak that it should have been split green and don't want to...

Smoke Freak, my wife already shakes her head with some of the things I do. Not sure I want to add fuel to that fire
Thanks Wutang I would appreciate that.
Hey beard,
I've thought about that but not many smokers show up around this area on Craig's List. I have a bigger smoker so I can afford to wait a while. Thanks for the reply.
I have a Brinkmann charcoal grill(pitmaster?) that I want to add a side firebox to. I can't find where Brinkmann sells the firebox separate and the Char-Griller side firebox attaches to the wrong side. I need one that attaches on the left side of the grill as you face it. Anyone know of a...
I could not wait any longer and just had to give it a try. Started out simple with cream cheese, shredded 6 cheese blend and wrapped with bacon. They tasted really good and I will be doing more and trying different ingredients.

This is an easy one for me. I just got started a month or so ago. I have always loved pulled pork and a neighbor had this really nice smoker. In talking to him earlier this summer, he told us he was moving. Somehow the smoker came up in conversation and he said he wasn't moving it again as...
Welcome. As others have said, take the 5 day course and read up on all the stickies and browse through the threads in general. And last but not least...practice makes perfect(though I will never say it is perfect just so I can smoke something else).
A couple of weeks ago I tried my first fattie. Can't say I get many style points but it tasted pretty good. Honestly, a little to greasy between the sausage and bacon but I did eat it as is without anything else. Done a fattie with hamburger the next weekend and liked it a lot better(but...
Welcome aboard. Very friendly and informative bunch here. Looks like you have something to add. Look for more questions from the folks here about those rabbits.
Not to hijack this thread but I have a smoker like the Brinkmann South Fork with the offset firebox, horizontal chamber and vertical chamber. I have been putting the meat in the vertical chamber so where would I put a water/sand pan? Is the water/sand typically used to keep temps down or to...
Hello "neighbor". I'm in south GA. I am just getting started too and it is a blast. Like you, I have picked up a lot of tips already on here and the few smokes I have done are good as is. Hopefully with some experience they will be great! Have fun with it.
