    @Retired Spook Do you have an actual written recipe? If I ask my aunt how anything is made, it's just verbal instructions; some of this, some of that, etc. Same with the MIL. And my cousin laughs at me for measuring ingredients.

    I have the XD also. I don't see minor leaks in the cook chamber as a problem. The leaks are tiny fraction relative to what's going out the exhaust stack. The only air entering the cook chamber is hot air coming from the fire box. I don't think any cold air is coming. As far as heat loss...

    I don't see any benefit to mounting it to the firebox. It would probably be more efficient to mount the pot directly under the cook chamber. [EDIT] I see in another video he actually burns wood splits over the pot.

    The Weber kettle is easy peasy and there's lot of accessories. But there's still a little fussing depending on weather and what you're cooking. No fussing means something with an electric controller.

    It's easier to maintain a steady heat using a combination of both charcoal and wood like you're doing. I just like to burn wood. No matter how you do it, if you're having fun and the food comes out good you're doing it right.
