    I'm fairly sure it was a tri tip roast. Now I'm amped up to smoke a prime rib. It was preseasoned and I didn't like the lemon pepper on it, but the pecan wood gave it a good flavor.

    Well, I do have post traumatic stress disorder. The best thing for that is good times with good people. Anyway, I'll ask my doc to prescribe a Lang smoker, membership in the country club and bill both to my insurance. Eh that would go over like a fart in an oxygen tent. Lol.

    Some of them are marinating in ginger soy sauce and some of them are marinating in Teriyaki sauce. Will fire up the smoker in approximately four hours.

    If I run it to where the top thermometer reads approximately 20 degrees higher than recommended temp, the meat turns out right. I'm learning the new smoker. Planning a big barbecue for Bastille day.

    The weird thing is some reviewers of the smoker said they have a hard time maintaining temperature, but I haven't had that problem. It ain't shabby for a cheap offset barrel smoker.

    Smoked some leg quarters yesterday and they went over really well. The thermometer is located high, but I've found that if I can keep the thermometer at a temp twenty degrees higher than the meat is supposed to be, the meat turns out good.
