    It was basted with oil, beer, garlic and oregano. Added bitter orange after 2 or 3 hours of cooking.

    I noticed that on shows featuring BBQ competitions, such as Memphis in May, the picnic portion of shoulders are trimmed except for the end where the leg starts. All the teams did this. Is there a particular reason? I've always trimmed the whole thing.
