    Adding gas assist

At a former employers we had 3 Lang 60's all with gas in the firebox only. If I remember correctly it was basically just a pipe with no end on it that protruded about 1/2 way into the fire box, and sat a few inches off of the floor. I believe that the local propane company did the install and it...

    Yesterdays reward! With QView

I'm definitely going to do a coal basket. I was looking at them yesterday on the forum, but didn't have time to run to Home Depot this morning. Have the folks and in laws coming this afternoon, and needed to get the smoke going.

Should i smoke two weekends in a row

Variety is the key. If you are doing ribs or pulled pork one week, do chicken or fish or a brisket next week. Also remember that the combination of rub, mop, sauce, and woods all contribute to a particular flavor. Changing or eliminating these will produce different results even with the same...

    Re Learning!

Thanks guys, SP makes great machines, especially for a set it and forget it type of situation. Until about 15 years ago most of the Sonny's still had a pitmaster that smoked everything by hand. As I understand it they lost a few stores to fires in the middle of the night, and started looking at...

    Re Learning!

Hello all, Getting back into smoking after a few years away. When I was a teenager we smoked all the time with an ECB, and then a custom built smoke house. We lived in OK, and had 15 acres of mesquite, so you can guess what we burned (we didn't even use charcoal). Later in life I was in the...
