    Bacon Cheesebuger Fatty

    Looks great. You gotta try one with blue cheese. Did one last week at my wifes request. The blue cheese seemed to cut down on the richness (even though I know it didn't). A 2 lb'r lasted about 15 min at the poker table.

    I just ate 448 calories worth, along with 3 slices of bacon cheeseburger fattie (another 500 calories?). Looks like I need to go for a walk!

    Cooking Music

    I have a set of outdoor speakers close to the smoker. Tend to listen to classic rock, but have grown quite fond of Kid Rock recently (latest album anyway) (he is about half country, and half rock). A little SRV and Hendricks. Definitely not "low and slow" when it comes to music around my house.

    May sound funny, but try sun dried tomatoes, pine nuts, and cream cheese. I do chicken breasts this way, and top them with sun-dried tomato pesto (as a dipping sauce, or slathered over the top after smoking). I know there is no meat involved, but you could add the prosciuto as well.

    I did not wrap the chuck fatty (first mistake). I also did them before I had my thermos (second mistake). I did let the neighbors try it (third mistake), and it was gone before I got a second slice. Definitely will do that one again. Great flavor, but could have come off about 30 min sooner...
