Brining in a cooler with some ice has worked for me. I've seen articles where some folks clean out a drawer in the fridge and do it in there. I haven't mustered up the courage to spring that one on my wife. She lets me keep fish bait in there in the summer and I don't want to lose my priveleges...
Good idea! I have a bunch of buckets too, but nothing food grade.
For brining, i use an old playmate cooler. It's just the right size for a turkey without having to make a triple batch of brine. Never thought about if it's food grade....I've hauled food in it for years, and they are marketed...

The last presentation I watched actually had an egg that was colored by using a flame. It almost looked smoked! My understanding has always been that the egg represents new life. (in Christ for our Messianic brethern.) What a great experience! Glad you participated.

I'm new to smoking and haven't done one this way, but I do brine and then deep fry. I've found that you can add whatever spices you want (Rosemary and garlic are my faves) to the brine and it will flavor it nicely!
After doing way too much looking and shopping I ordered a Smoke Hollow Electric smoker. Can't wait for the UPS truck to get here! Thanks to all of you who helped me make the choice!

I've never tried it, but I've read where lots of guys bleed thier fish out by cutting a gill and throwing them in a bucket of water before they hit the cooler. They say it makes for a much milder fillet. I've never had a problem with gills, but know one guy in particular that used this method...
