Does anyone have a good recipe for Indian Candy, also known as Salmon candy for the dehydrator?
I've seen a lot of recipes for the smoker but I need to do this on a dehydrator.
Thanks.
I don't have a side firebox. The firebox is under the CC. I have to get smoke into the meat. If I use only coals, how will the smoke get to the meat?
I do usually have a very hot on the bottom and they burn a little. Thats not a problem because I have a few friends that love the burnt...
Yes, I am using the Mac Daddy. I have no idea how to get the bottom rack to 165. The only temps gauges I have are in the door. Should I add 1 to the lower rack? If so can you recommend a type/brand/model of temp gauge?
I do make Jerky and with the 9 racks I make a lot of jerky. I don't...
Hi All,
I have been smoking for a few years. Everything I do is quick. I know that doesn't make sense in the smoking world but I mostly smoke Jerky and it only needs to be there a short time to get the flavor.
I watch a lot of cooking shows and you tube videos about smoking and the one...
Hi Folks,
Is everyone prepping for their Superbowl feast?
I'm doing just that. I'm making about 30 pounds of pork and beef ribs. I don't have the time to get the smoker running so I plan to bake them then caramelize a glaze on them at the end.
So my question, because I never get the exact...
Well, I bought one from them. I called and spoke with the owner. He quoted me about $3,000. That was his best price and he said the price was good for a week. He called me a few days after the offer expired. He made me a very low offer because he wanted to get a presence in NJ and asked if...
I know you said it was not fun or funny but you told well so I had to laugh. I just ordered this model. It comes tomorrow. I will create a thread once I have it and use it a bit.
Hello, I am trying to find out what I can about marinade meat vacuum tumblers. I read a number of posts here that had your name in them. I understand you might sell them or maybe just the canisters at this point. What can you tell me about this devices?
Hi All,
Some one told recently about these Vacuum tumblers and how they substantially speed up the marinading time for meat. I make a lot of beef jerky and I sell it in farmers markets and Food/Music festivals. I find myself not being able to keep up with production.
I know nothing about...
I am looking into these now and I also plan to use it primarily for beef jerky. I put my thinly sliced meat into tubs and refrigerate over night or 2 before drying. How much time do you leaving it in the tumbler when you make your beef jerky? Also, who is Todd? can you please send me his...
Hi Alphaman,
I was just told about these machines. I'm not completely sure what they do. I make beef jerky and I slice the meat very thin before marinading. Do you think your Vacuum meat tumbler might be a good idea for me?
Please contact me when you get a chance. I would like to talk to...
Hi Dave,
I dehydrate. I might throw it on the smoker after it's dehydrated top add smoke flavor rather than using liquid smoke. It makes a big difference.
Let me see if I understood you correctly.
10lbs meat (which is 160 ounces)
2 1/2 pounds water
3.2 ounces (160 * 2%)
1.6 sugar...
LOL. I finally bought a new smoker earlier this year but I'm still tempted to buy this one especially if I can negotiate that price. However, I think my wife will kill me. lol
Hi,
I make a lot of beef jerky. I sell it at farmers markets and festivals and I can't make the jerky fast enough to meet my needs of all of the events I am at.
I am thinking of buying a new model dehydrator. I currently use 3 'Nesco FD-1018A Gardenmaster Food Dehydrator, 1000-watt"...
Hi folks,
I am trying to make beef jerky with out using soy sauce or Worshestershire sauce. I want to make a dry rub or possibly use a little water in the marinade to distribute it better. I have been making jerky for a very long time and I have several home made recipes that friends and...
