    Grrrr! Previously frozen brisket

I too get most of my meat for smoking from Sam's and have never had a problem. Like everyone else said I think you took the brisket off too soon. After you hit 170, try wrapping it in foil with your favorite mop and then let it cook longer. This will cause the brisket to get a lot more moist...

The Gauntlet Has been thrown down!

Let me guess, he probably was going to go down to the local wholesale food store and grab some shredded prok. Throw some BBQ sauce which he also purchased at the store and then maybe throw in some of his own spices and then call it Q. Jeez, when will they learn that Qing isnt for the faint at...

What do you use to keep the bacon wrapped up on the outside?

    First Afterburner Smoke

Something else I noticed from my last ABTs, I tried doing ABTs by splitting them down the middle and stuffing them that way instead of coring them out and stuffing them. The "boat" type were milder, I'm not sure if it was the pepper itself or how they were prepared.

    Store bought Marinade.

I'm not one for enjoying a store bought marinade. But in a pinch sometimes you have to improvise. That has lead to a new find for me. I recently picked up a "Jack Daniels Mequite Marinade Pack" and I have to say it is pretty good and easy. They put a mixture of spices and of course the all...

    Check out "Chuck eye steaks"

My thoughts on the Chuck-Eye. After I read this suggestion a while back I have been looking for Chuck-Eye steaks in the market "when I remember". Anyways my local Safeway had quite a few packs of them. So I decided to get a package of them and trusty Rib-eyes as well. After marinating both the...

soak or not to soak, I've solved problem!

I wouldnt soak the JD chips unless you plan on keeping the water in the smoker to let it evaporate. I tried to soak some JD chips and all the JD flavor came out in the water as the chips soaked. Then your left with oak.

    mesquite for pork butt?

Your using quite a range of woods. Mesquite most likely will be your main wood and then your using JD chips (Oak) and Cherry wood. I would skip the cherry wood because both oak and mesquite are strong flavors and will most likely mask the cherry. My personal opinion I dont like using mesquite...

    First Afterburner Smoke

A gardener friend told me that when your growing Jalapenos, the amount of watering you do will determine how hot they will become. If you water them a lot while they are growing, they are suppose to be hotter. If this theory is correct, then if the jalapenos are grown during a wet year, then...

    First Afterburner Smoke

Here is some pics of mine: Overall View of the smokebox. Inside the smokebox. With the tinderbox. I modified mine, I tried the large juice can and didnt like it. I found this old roaster pan and it works great. I can use the lid like I'm doing here to snuff out any flames that come off...

    First Smoke...HELP

You've hit your plateau. Your going fine. Give it some time and it will start to rise. When you take a peek at your brisket, spray some Apple Juice on it. If you have some mix the juice with some rum. Adds flavor to the bark. PS I dont smoke with an electric smoker so I dont know if spraying...

    Brisket Question

Guess you would call it my fathers day present. Well I pulled it off at 170 and foiled it and wrapped it. Since everyone is coming over at 4:00 pm. I'll fire up the smoker and bring it up to 190 when it gets a little closer to the time and throw some ABTs on there as well.

    Brinkman SnP/Turkey cooker burner Mod

One thing you wanna watch is the burner blowing out. If it blows out and fills the smokebox with propane and a spark happens, boom!! If you can keep the burner protected then you got nothing else to worry about. Another thing you can use for a tinderbox is a small roasting pan. I had one...

    First Afterburner Smoke

I knew you'd like it. I thought it was like night and day between smoking with charcoal and then putting in the afterburner. I know some guys say I'm cheating but I've had a lot more time to smoke now that I dont have to babysit. And it still tastes pretty dang good. I dont know about you but...

    Brisket Question

Anyone ever experience a brisket that had a very short plateau? Here is the story. I put my 9 lb, untrimmed ( I like the fat on it to flavor and keep the meat moist). brisket at 2:45 pm it is now 10:45 pm and I've hit 170 on the brisket. So my calculations are it took 8 hrs to my brisket to...

    Try Cheese sticks!

I dont have a bakers bag (or whatever you call them) and stuffing ABTs can get messy doing it with your fingers. So what I figured out is use Cheese Sticks. They now come in a lot of varieties so you can usually find the cheese your looking for. My last batch came out good and wasnt much of a mess.

    First Smoke...HELP

You'll be fine, follow some already good advice that others have posted. I'll be smoking a brisket also. Although I'm starting this afternoon so I know I get it done before tomorrow afternoon. I really dont want a whole bunch of people waiting around for the brisket to be done. Brisket in a...

He he he....Rocky Mountain Oysters taste sort of like chicken. Although the texture is completely different. When we brand we dont even save them anymore. Guess the coyotes have a good feast that night.
