Can finally use less charcoal. Kinda burn through it when your outside temp is waaaayyyyy below freezin.

Did another turkey last weekend. Turned out pretty good. I brined it over night and put some pineapple and a couple of plums into the cavity. I also did it with an "Asian" style in mind. I used peanut sauce on it and made a soy sauce, mirin, and sesame oil as a spray. It turned out pretty good.
Shes an 8 lber and she has been in for an hour. I havent peeked yet, but temps are steady and holding where they need to be.
I trimmed a little fat, not much really. Used my rub that I use for ribs and butts. A little brown sugar and spice rub that has been treating me very kindly. I figure...

I'm doin some spares today for the first time in a long time. I'll be doing the 3-2-1 method and spraying them with a apple juice/ Cutty Sark mixture. I hope it goes well and I'll gets some q-view up.

Started early on 2 smokers, My Chargriller has the ABT's and ribs. Started the butts in my buddy's Little Chief electric jobbie. Moved the butts to the Chargriller when space opened up.
Heres a view of the ribs and ABT's, I will have the pork when it is done. Patience, patience, patience!
I'm goin with hickory with a little apple and maple mixed in for good measure. I've been around 230-250 so far. Been on for about an hour so I've got a ways to go. I think I'm going to pull the beef for tacos.
Not to sure on when to foil it, but I'll find out soon enough I guess!

Here we go again. I got some spare ribs on and also doing a sirloin tip roast. I used my normal rub ( Jeffs recipe with a few minor adjustments) on the ribs. Also I marinated the roast in some worstecershire sauce, vinegar and other various spices.

So, I'm cleaning out the freezer and I found a "beef round sirloin tip roast"
I'll use my normal rub and all that stuff. I was wondering if anyone out there had any tricks or tips.
