    Cleaning the grates...

I tend to do this after each and every smoke on my woodwind. I will scrub them with soap and hot water. I see many videos where people are demonstrating their smokers and it does not look like that is a common practice. How often do you all clean your grates, other than just with a wire brush...

    Propane/Pellet usage comparison

Has anyone read anything about this comparison? I've had a GOSM Big Block for several years and am now considering a Camp Chef Timberline since I am retiring at the end of the month and won't have all the "free time" I currently have. ;o) I was just curious how the price compares between...

    Brisket Temp

When taking a Brisket to 200*, should that be the flat temperature or the point temperature. There is quite a difference in thickness and temperature, it seems. Thanks!

Reheating lots of individual spare ribs

Yesterday, I smoked 4 racks of spare ribs using the new method discussed by jeff of Pre-slicing Ribs Before Smoking Them. I know have an aluminum foil pan in the fridge full of individual ribs which I need to reheat for an afternoon tailgate. How would you suggest I do this in the oven? It's...

    GOSM max temp

I spatchcocked a couple small chickens today for my big block. I wanted to cook them real high so the skin might be fit for consumption. I left water out of the water pan thinking that would help as well. The outside temp in my part of Kansas was in the upper 80's today. I hottest I could get...

I have some salmon in my freezer that I vacuum packed last summer  immediately after catching on Lake Michigan. So it has been in the freezer for over a year. New cover

I purchased a new cover for my GOSM Big Block, 3605BGD. I bought this one from Landmann as I could not find one anywhere else. the last one I purchased from Amazon and had the GOSM logo etc on it. I gotta tell ya, the one by Landmann is far superior than the other one I had. It is a little...

    Sloooooooow brisket

I put on an 8.5 lb flat this morning around 8:00 am 10 1/2 hrs later it's only at 163*! My temps have been real steady at 230 - 240 all day. My gosh, I've never had one go quite this slow before. I've verified both my smoker temp and internal temp of the brisket. I had another 6  pounder on as...

    Salmon after the smoke

How long do you suppose you could keep salmon in the fridge after it has been smoked? I caught it last summer and immediately vacuum packed it. I smoked it last Sunday and the wife is still eating on it...

    GOSM Low Temps

Been having trouble getting my Big Block above 190 or so lately. I decided to do a little maintenance so I went to the music store and purchased a brush that is used to clean out the tubes on a trumpet. It has bristles on each end and is a coated cable  maybe 12" long or so. Really worked well...

    Thaw, Smoke & Refreeze

I have some salmon in the freezer from a fishing trip last July. Would it be ok to thaw it out and smoke it and then refreeze it for later consumption? For some reason, I've always thought that it was not a good idea to refreeze previously frozen foods??? Thanks! MoFo

    Brisket Judging Form

Does anyone have a link to a form I could use for judging brisket? A friend asked me to judge their 1st annual neighbor hood BBQ cookoff and will be judging brisket only. I have not done this before and research shows typically appearance, Tenderness/texture and taste and the main catagories...

    Judging Tips

A friend at work has asked me to judge their neighborhood "smoke off" in a couple of weeks. I thought it sounded like fun but have not done anything like this before. Can anyone offer up any "judging tips" on how to judge a competition? It is strictly low key, but I would like to do a good job...

    Regulator Problem?

I was using my Big Block yesterday and could not get the temps to go above 180. I had plenty of gas in the tank. I reset the regulator by disconnecting, etc.  It improved for a while but noticed when I adjusted the control know the flame would get real long and lanky... If I shook the tank, the...

    Best wings

Sorry, no q-view but... I did my first wings on Sunday. I dusted them with Jeff's naked rib rub Saturday night, threw then in the big block at 275 for about 2 hours with hickory and oak and then drizzled them with Jeff's Goodness Gracious Sakes Alive Barbecue Sauce.   There were nothing short...

    Salmon question...

I have just returned from a trip to Wisc. salmon fishing. Some of the filets that I brought home have small sharp bones along where the spine would be. Is there a way to remove those or do you just need to be VERY careful when eating? Thanks!

    Heading to Algoma Wisc

in the morning with 5 friends to do a quick salmon fishing trip. Long drive from Kansas, but hopefully it will be worth it.  I have never fished for salmon before, so am looking forward to it! Hopefully I'll be back looking for some good tips on smoking/grilling salmon later!
