    Been a long long time

I started here a couple years back or so, learned a lot, posted a bit, learned a lot, ate a lot, and even made some friends, and then I just sort of faded out, but I was still reading here almost every day, and then from time to time, and then not as much as I should have.  What a mistake!  I...

Butt and a bear (yes bear, not beer!)

OK, so this is my first post AK vacation smoke, about an 8-9 lb pork shoulder blade roast, or butt, on my ECB, which actually held great temps today. Smoked for 6 or so hours before foiling, then about two more before I hit ideal temps and tossed it in the cooler in a towel for 90 minutes. It...

    Cover your butt?

Doing a 9 lb bone in shoulder/butt tomorrow (starting early). Just got it rubbed for an overnight dry marinade. Dumb question, but should I cover my butt with saran wrap over night or just let it hang out in the fridge?

    Pac is back!

Just got back from a few weeks hiking and camping around the great and beautiful state of Alaska, home of the prettiest VP candidate ever nominated (whether you like her or not, she's pretty hot!). I didn't get one of those nice $1200 checks she passed out to each of the AK citizenry to keep...

Would you look into this smoker deal on Craigslist?

This is a long drive for me, but for a guy who may want to upgrade from an ECB in the future, would the folks on the forum perhaps pursue this deal: http://seattle.craigslist.org/sno/for/782657468.html This is a heck of a drive for me, probably 180 miles RT, so looking at at least 35-40 bucks...

Late Sunday q-view: Mini-meatloaf smoke fest!

I know it's late for the rest of the country, but for those of you that are still awake thinking about food... I have a recipe for "mini-meatloves" that we do often that we got from a B & B in Oregon a few years back that did dinner for us. We loved it and have been making it ever since. Today...

First fatty, some burnt ribs and some BEAUTIFUL wildflowers!

OK, did my first fatty yesterday but didn't get my q-view up on time. I also scorched some ribs. The smoker was running hot and pretty much ruined about 22 bucks worth of baby backs (I blame the smoker, not me!). Live and learn. But the fatty, stuffed with rainbow chard, carmelized sweet...

Too much time on the forum?

So, I've been absent for a couple weeks, not that y'all missed me . Still, over the fourth weekend, my girlfriend (living together five years--no ring just yet!) told me I was spending way too much time on the forum--she got mad at me when I came to post q-view when we had guests over, but you...

Stick a fork in me, I'm done (with q-view)

Goofed my earlier post. I hope this doesn't post twice. Did a nice brisket today with some ABTs, dutch's beans, and lots on the side. Here's some q-view before I head in for some pie. Happy 4th! Getting Started: Rubbed and ready! The finished product: Dinner!

You all are just plain crazy!

I did my first round of ABT's today, stuffed the peps with some cream cheese and pepper jack. All I have to say is those of you who can take the heat of these things are friggin' nuts. the mouth is on fire! I am usually a huge fan of spicy food. What a bunch of nuts you all are! Any hints...

Saturday night solo glottony fest w/ q-view

Follow up on my solo Saturday night with the significant other off at a wedding and me home to smoke all by myself. I opted to smoke the whole rack of spareribs untrimmed instead of doing them St. Louis style, and thanks to an earlier suggestion cooked a whole order of dutch's wicked beans...

    An evening to myself

OK, the significant other has plans without me tomorrow night (wedding--thank goodness I don't have to go!) and I am going to take the time to do a smoke for 1 in her absence (any one else ever do that around here?). I have a lot of options in the freezer but couldn't pass up some spare ribs...

Can you smoke a milk shake?

OK. I have put it off for years and was supposed to do it last week but changed the appointment so I could at least have the memorial day weekend for a smoke (did chicken, it was great!), but tomorrow AM I am finally getting four impacted wisdom teeth extracted. I am not fishing for sympathy...

Near disaster for my ECB with pix!

Just moments ago we had a big wind come up and knock a huge branch (about a 35 footer) off of an old alder in our back yard. It totaled the bird bath and a couple of feeders but missed my ECB by mere inches! Here are some pix. Looks like I will be cutting up some alder for the wood pile. I...

Smoking out the neighbors--mother's day tri-tip with q-view

Did a marinated tri-tip today for mother's day. While I was getting the coals started, the neighbor came over to complain about the smoke, noting that last weekend when I smoked there was a "smoke smell" all day. I said, "well, isn't that a good thing?" She didn't think so, so I apologized and...

    Target Temp for a Mother's Day Tri-Tip

Gonna smoke a 2.5 lb tri tip tomorrow. Jeff's recipe suggests a target temp of about 225-250. Other sites online suggest about 140-150 for medium rare. Am I missing something here? I don't want to over cook it! My future mother in law is coming over for lunch and the pressure is on to deliver!

    1st Q-View--Stuffed Pork Loin

Brined for a couple of days, stuffed with prosciutto, spinach and swiss, dusted with rub, end product delicious! I hope the pictures work. My buddy said it was the best pork he had ever had. This was my first attempt at smoking a pork loin and it came out perfectly. Leftovers tonight!

How long to smoke a rolled/stuffed pork loin?

I'm going to smoke my first rolled/stuffed pork loin this coming weekend for guests including a guy that thinks he's pretty boss on the grill/smoker. I intend to show him up. I'll roll it with prosciutto or ham and some spinach and cheese and dust it with a good rub before it goes in the...

    Smokin in the rain

My name is Steve and I live in the perpetually green, wet and moldy Pacific NW. I smoke in the rain under a blue tarp if necessary and that makes me an authentic northwesterner, I suppose. I bought a brinkman water smoker at Lowes a couple of summers ago and have had some good and bad...
