challenge - name three flavors that (together) best compliment beef!

If you can have only 3 then it will be Kosher salt, cracked blk pepper and for the 3rd it will be a pan of Au Jus under the brisket to catch the drippings, use as a mop if needed, and of course after removing the grease from the top, the best dipping sauce for a sammie in the world. It is only 3...

Do You Use A Drip Pan?

I also use the aluminum pans from sams, I went to the hotel resturant supply and bought the racks that fit them, they use them in buffet lines with fried food, The racks are for 1/2 buffet trays. I put my meat on the racks. Works perfect. leaves no mess and dosent take up a extra rack.

    Mes

My built in probe is as accurate as my other 2 probes. I wish it had a alarm and I wish it was removeable. I end up using my old probes as they are easy to clean and will beep when done. I do like the window.

    If no questions are dumb....

I was in Sams the other day looking for baby backs and all they had were called back ribs. Are they one in the same or is there a difference in baby backs vs back ribs? Thanks in advance BUddy

    Rushed smoke-baby backs

Yea, the fish skinner is a catfish skinner and it works great, If you dont have a catfish skinner use a papertowel to grab the membrane as it will help you grip it. a cold bud light helps as well

    Propane Question

Make sure that you get enough primary air so it wont soot up on you. You should have a mostly blue flame that does not lift from the burner and you should be fine.
