Make sure you report back. I haven't used cottonwood... yet, but I have plenty I use in my backyard firepit.
Just gotta get thru all my apple, mulberry, and pear first.
Here in NE, I can't throw a stick without hitting a cottonwood.
I just put about 10 pounds of chicken wings on the smoker.. Taking special care to make sure none of them are touching each other so the apple wood can tenderly kiss each part with smoke.
My plan is to smoke them for about 2 1/2 to 3 hours.. then put them in gallon ziploc bags with the hot...

But now.. after noon (which it now is by 20 minutes..) all is fair game.
...Hmm.. maybe thats in Iowa.. I can't clearly remember now. I'll find out when the wife gets back.
I do have a little bit of Vodka if all else fails.
My rope gasket didn't stay on as well as I liked.
Along the back is still fine, but the sides and front fell off.
So now I just stuff the rope gasket into the crevice along the sides.
Kinda the jury rigged way of doing it.. but it seems to work fine.
I just have to re-stuff the gasket in there...
they were awful tasty. This was a couple of months ago tho.. I'm just playing catch up with some of the stuff I've been doing..
I do have some chickens on right now tho..

I've smoked many a thing since I was last on here.
I just put three whole chickens on the smoker. q-views to follow in a couple of hours.
It is really windy here today so I rolled the smoker to the garage.. the wife is off to get a bottle of Tequila.
Skin so soft does seem to work.. just as good as the deep woods off.
I have several tiki torches in my yard.. Still not convinced.. but I do like the look.
Third.. and best.. I just light a small fire in my pit.. (firepit.. not my smoke n pit) every once in awhile.. throw some green weeds on...
I've only done ribs a couple times so far.. but I must be getting really lucky.
I've had no problem whatsoever. Just put a knife between the membrane and a rib to loosen it up a bit, and pull it right off.
The entire membrane came off every time, with my bare fingers.
I think it looks like a great idea.. But I would set the smoke alarm off every time. And the price is a little much for something that couldn't do more than 4 or 5 chicken quarters..
The helicopter things are definately maple.
In the fall.. do the leaves turn silver? = silver maple
In the spring.. are the leaves red? = red maple
If neither of these.. I think there is a white maple, and a sugar maple..
Never the less.. all maples are good for smoking.
