    Help with company picnic

Help! I have been nominated to grill/bbq for our company picnic. We have 40 adults and 22 kids to cook for. We are thinking of doing steak, chicken, pork and salmon for the adults and hamburgers and hotdogs for the kids. The lady planning this thing would really like some sort of teriyaki...

    First Pastrami w/q-view

Here's my first pastrami (or mock-pastrami). I used a store-bought corned beef brisket tip, applied the rub, and smoked. Came out great as you can see!

    My first buckboard bacon w/q-view

My first buckboard bacon came out great using the Hi Mountain Buckboard bacon cure, thanks to everyone here. I was probably a bit excessive with my trimming of the pork butt, since I ended up with three pieces, but it came out okay anyway. After curing for 14 days (2 days longer than...

    Eggs in fatties

I've seen boiled, scrambled and raw eggs used in fatties on here. What's the best way? Do the raw eggs cook through? I kind of like the idea of using the raw eggs, but I don't want food poisoning.

    Hello from Reno!

I just recently got into smoking. I bought a WSM about month ago and have been smoking every weekend since. I wanted to get a smoker for a long time and was looking at those side box units, but then I discovered the WSM and changed my mind. So far, no regrets.
