Got up before 6am this morning to start this smoke.
The plans are for a brisket flat, pork butt, corned beef, baby back ribs, st louis ribs, and some turkey tenderloins.

Fired up the smoker at 5am this morning.
Loaded up the 12lb brisket and 7lb pork butt at 6am.

Fired up the smoker on a hot (100+) day while the kids were in the pool.
Made 2 meatloaves (ground hamburger + pork). One stuffed with hard boiled eggs, and the other with steamed broccoli and cheese.

Fired up the smoker at 5am this morning. Put on a 7lb brisket flat and 6+ lb pork butt.
At 1pm (right after the pics below) I threw on 2 slabs of baby backs.

Wife has Bunco tonight, so I worked from home and cooked up some food for her party.
One 7.3 lb brisket, some beans, and 2 meatloaves (1 stuffed with hard boiled eggs, the other with broccoli and cheese).

Title pretty much says it all.
Plan on doing some Memorial Weekend smoking, and would like to make sure the briskets/pork shoulder are done in time. So I plan on starting early.
How long can they stay wrapped in foil/blanket in a cooler and be okay to slice and eat ?

Before using it, I take the grates off and scrub them and coat in Pam.

Hi. I've been smoking with my offset smoker now for about 2 years. I've gotten pretty good with brisket and baby back ribs. I've dabbled a little with pork shoulder, turkey, and chicken.
