    Precision BBQ

Not sure this is permitted here since I'm not a sponsor (yet) - if it is not, then please delete. A friend and I have been active BBQ smokers for many years and several years ago started working on a cloud based temperature probe. We've built many prototypes and are now finally starting a...

Keeping brisket warm for 6+ hours (or possible more)

I plan on doing several briskets for our annual holiday party. This year I'd like to do them overnight and have it done early so I can get other stuff done before the guests arrive. I'm going to shoot for them to be done around noon and plan on slicing around 7pm. That is pushing it a little on...

    Roast Beef/slicer questions

I bought a fancy new meat slicer and I'm all gung-ho on using it ! I'm going to do a corned beef this weekend, and would also like to do a roast beef (both for sandwiches). I see that most people wait until the next day (when they are cold - out of the fridge) to slice. Is there any reason not...

How long is it safe to keep cooked Brisket wrapped in a cooler

Title pretty much says it all.  Plan on doing some Memorial Weekend smoking, and would like to make sure the briskets/pork shoulder are done in time. So I plan on starting early. How long can they stay wrapped in foil/blanket in a cooler and be okay to slice and eat ? Thanks !   -- Lee

OLD COUNTRY BBQ PITS in Larado, TX

Looking at upgrading from my current Oklahoma Joe to something bigger and better. "Old Country BBq Pits" in Larado has some nice units at reasonable prices. Have any of you seen/owned/used one of their units ? I'd be interested in some feedback on their quality. They look like nice units. I'm...

    Cleaning the grates

I've had my offset smoker for a couple of years now. Before using it, I take the grates off and scrub them and coat in Pam. Is this what everyone does ? -- Lee

    Hello from Round Rock Texas

Hi. I've been smoking with my offset smoker now for about 2 years. I've gotten pretty good with brisket and baby back ribs. I've dabbled a little with pork shoulder, turkey, and chicken. I look forward to picking up more pointers and recipes ! -- Lee
