    It's much more simple than You think. Pick a good Premixed Jerky Mix. You add 3 times more garlic and onion powder than your recipes call for. 3 tablespoons garlic powder and 3 tablespoons onion powder. You have enough salt. Add a tablespoon of Jalapeño powder per 5 lbs.

    Your fat to meat ratio is wrong. Duck is a really fat meat. Don't put the Brisket fat in there.
