    Naaawww... The key to a good wing sauce is to get the balance of sweet and sweat. Mine let's you know there's heat in there, but sweet enough so you can keep eating up .....but when you stop eating.... THAT'S when you need the milk!

    Sweet BBQ sauce

    A nice ingredient to add sweetness is Welches grape, apple, blueberry juice concentrate. I won 6th place in a sauce contest by adding that. :Edit: A nice prepared SUPER SWEET n thick sauce is Blues Hog Original. Great on Pulled Pork since most judges have a sweet tooth...

    I only use sand in my WSM. I've never had a problem with temps. About the only thing that can mess it up is wind...so a windbreak is nice.

    Buddy of mine in Utica said "I got the packer at Restaurant Depot, however, the Super WalMart out here carries them now on a regular basis and they don't look too bad either."

    Sounds fancy, but it's just braised lamb shanks. topped with Gremolata (parsley, lemon zest, and garlic) Damn good!
