    Need info on Boneing knives

I just recently bought a 6" boning knife from Victorinox from Amazon that was noted as being flexible. It is. but not "flimsy".. Top rated knife. It is super sharp and works excellent.

    Electric smoker or not?

Another Thought..... All cost at least some money to operate..... Charcoal & Propane are expensive..... Not sure how they compare to electric cost wise, but there is also the inconvenience of running out of either Charcoal or Propane, take your Propane Grill for example..... I have not owned...

    Electric smoker or not?

I have a 30" MES for about 2.5 years now. It has more than enough room for a family of 4..... I use it in the Snow, Wind, Rain, Cold, etc..... and its spent it's whole life outside, with the last 8 months not even covered & I have never had a problem with the control unit, nor have I ever taken...

MES fixed & wheel kit added

Looking back and given the short distance between the wheels/casters, I would suggest a "cart" type unit that displaces the weight more evenly over a wider area on the base..... Even with the casters on a 30" when rolling it in straight motion, it has a tendancy to want to tip, due to all the...

    MES under the patio...

Fan is what I used also under a covered patio that was 3/4 enclosed it worked great, otherwise the smoke lingered in that area & found its way inside the house..... I have also caught beef ribs on fire inside my MES with pretty considerable flames coming throught the vent when I came outside to...

    Temps for smoking chicken sausage

Be careful what you tell people on times & temps...... There is no cure in this chicken sausage, it is noted as being "fresh"...... I smoke my fresh chicken sausages hot @ 250* - 275* until an internal temperature of 165* F minimum. MBalli's instructions are generally used in smoking a "cured"...
