    I used the thermo from my turkey fryer to read my grill temps. I do plan on adding an upgraded thermo to it soon though. It is the Brinkman Gourmet smoker I have. I said I am not much of a fish eater, doesn't mean I don't take and eat a few every now and then.

    I did just that. At 160*. I took apart the ECB and put one of the racks just above the charcoal so the skins would get a crisp to them. I will have to try mayo next time though. Thanks. I know the skn isn't so good for you, but it tastes so good. lol
