Just picked up some tonight at Costco. Pretty inexpensive and makes great meat for jerky!

to cure or not to cure?

Thanks for the feedback, both this post and the one just above. I probably had it in the 160+ range and for about 10 hrs. That may have done the trick. To answer the question of why NOT to use curing salt: I don't like preservatives in my food. By using pure SALT I thought I was being safe as...

GOSM, Converted from Gas to Charcoal

I like the idea, however if I didn't want to remodel my GOSM could I just put some charcoal into the cast iron pan and get it going with the gas. Turn off the gas and let it go?

to cure or not to cure?

Take it easy, I just got on this forum to learn. I have been making jerky for years in my little chief. I make my own brine with salt, soy sauce, etc, but never used "curing salt". We have never had any issues and I have kept it stored in the pantry for months. Isn't regular SALT enough to...

Little Chief, should I even bother?

Ditto! I use mine for cheese, nuts, etc. Anything you don't want to get hot or melt! ;) I DO use the box on cold days/nights too!

    My new GOSM Gas Smoker

The owner's manual just says 36" Gas Smoker. Is that the model? Interesting thing about the water. I would think it would make it moist and basically keep the smoker from going under 212 deg (boiling point of water). I assume by TBS you mean a light smoke and NOT the heavy smoke, correct...

    My new GOSM Gas Smoker

Yes I had water in the pan but I am wondering if I need it. When I make jerkey I would think that water would not be necessary. I like my jerkey on the firm side and the water(steam) is going to keep it moist won't it? BTW, it was about 65 degrees outside.

    My new GOSM Gas Smoker

I just found this Brand New in Box propane smoker. I put it together and "seasoned" it tonight. I put about 12 cups of water in the pan and a full smoker box of wood chips. My results are below. Let me know if this sounds normal and if there are any tips you may have. Vents Closed (not...

OK, I got it. The email isn't very clear. They actually give you different password and email address for the order than the one you use to login to the forums. Sorry for the problem, it worked! My Fault!

Nope, it has a link you are supposed to go to and login to download. It doesn't work. NOT a good experience for my first time here. I feel like I am getting scammed. Please tell me I am not!

Hi all. I will make my introductions in a bit, however I have an issue. I have paid for and gotten a receipt for the rub and sauce recipes sold by Jeff. The email states, "login with your email address and password. Once you are there, you will see a list of the item(s) you have paid to...
