Got a question for the experts. This oak was apparently split in Dec/Jan. I know its not seasoned as much as I would like, but is it seasoned enough to cook with? I don't know if it matters but I usually pre-burn. Does pre-burn allow you to use greener wood??

Tried my first smoked chickens and ribs yesterday. Chickens were injected and rubbed night before and then beer canned and mopped during the smoke. Spare ribs were rubbed night before and then sprayed during smoke.
This is only the third time I've used this smoker so I'm still getting used to...

I have been trying to find time for my next smoke but shtuff keeps getting in the way. I am determined to smoke saturday for dinner but will not be able to get the pit going till about 3:30 or 4:00pm. we have a few friends coming over to eat. I can maybe push us back to 7:30 or 8:00 to eat...
