Yes I am new and know nothing.

From one Noob to another...welcome! By the way, the advice about starting out by smoking a boston butt is sound. The first one I did turned out pretty darn well and I had no clue what I was doing.

    Other Hobbies

Motorcycles for me too. Actually (and don't hate me for saying this) motorcycling is my #1 passion. Two yamaha's and a Honda in the garage. Will hopefully add a Ducati in 2008. Third on the list would be radio control planes. I also enjoying playing and coaching soccer, and mtn. biking.

I've eaten at the Dreamland in B'ham and was really disappointed. Maybe I caught 'em on a bad day or something. The original Dreamland in Tuscaloosa is a different story...mmmmmm..good!!

First try with my new charcoal smoker (char-broiler silver smoker)

I just got a Char Broil Silver smoker right before Thanksgiving. I'm glad I came across this thread as I have had a little bit of difficulty maintaining a constant temp. Can somebody post a picture of the heat shield or flashing in the fire box? I can't quite wrap my mind around the concept.

Thanks for the warm welcome everybody. I'll definitely be tackling the ribs again...probably over the Christmas holidays. I'll have to give the 3-2-1 method a shot.

    New Smoker in Mississippi

Hi folks!! I've been a long time fan of smoked meats and have always wanted to try my hand at it. The day before Thanksgiving, my wife surprised me by giving me an offset smoker as an early birthday gift. So far I've smoked a turkey (successful), ribs (not so successful), and a boston butt...
