I bought a 11# 4 bone Rib Roast to do for Xmas Day and it is my first one ever.
Gonna smoke at 225f and was planning about 45mins. per pound. Shooting for the 130-135 internal.
Timing is the question???????

I was in the local Gander MTN. today and saw that they had the Smoky Mountain 30in. electric for $99.
The 34in. propane was $130.
I'm looking to upgrade from the Big Chief so I can do larger meats and not just jerky. Would the propane be the better way to go?
How much can humidity affect cooking times?
I did my first smoke last week in a Big Chief. It was 20f outside. I put a cardboard box around the BC to help insulate it. cooking temp varied but then reached about 200* for last 2 hrs. or so.
I did venison jerky...outside looked a bit charred but...
