Local grocery has Choice Chucks on sale. Avg weight around 22lbs. Wondering if anyone has tried the SmokeyOkie method on one of these. I've been wanting to try his method for quite awhile...has taken some time to get the nerve up to sear before smoking.
Plan on rubbing with blk pepper, onion...
I've roasted dried new mexico and california chili peppers for my tamale red sauce....should be similar I would think. Just put them on a cookie sheet in a 450 degree oven and leave the door cracked open so you can smell them. In about two minutes you'll notice the roasted smell...a few minutes...
Took a triple recipe of Dutch's beans to work (hospital) today along with some other stuff. Had the place smelling so good I'm sure the patients were disappointed when their food from the crapateria arrived . They were definately a hit. Will be making them again in the near future. Need to get...
Thanks for the feedback guys. I'll try the mustard before rubbing next time and mop/spray. Truth be told I had apple juice on hand and had planned on spraying, but the bark was so darned purty I just pussed out and didn't do it.

I guess I was one of three people on the planet without a digital camera. Well I fixed that last week and spent yesterday smoking and taking pictures....so here we go.
My fuel for the day.
Charcoal and wood chips loaded
Pork after rub and overnight in the frig
On the grill with a...
Found this picture of tuning plates. Basically the idea is to have the smoke from the firebox to travel under the plates the full length of the smoking chamber to even out the temp. Small gaps between the plates allow smoke to get to all of the meat.
Just the way I understand it. Like I say...
Nope. Mine has a piece of 1/4 by 2 strap as a baffle, but it ends about 1/2 inch into the firebox and about 1/2 inch below cooking rack. Guess it works to keep the radiant heat from flames off the meat, but doesn't do squat to even out temps. Plan to add tuning plates made of 1/2 by 4 inch stock...
I started with a SNP in 2000....had to leave behind during a job change, but it worked fine. I didn't know enough to modify it back then. I then had a New Branfels Bandera until last fall when I got a Cimarron. The main difference like everyone here has said is the thickness of the metal. It...
Smokeaholic???....Naw.... I would consider explaining to your wife that you merely have a redundancy engineered smoking system in case of single, double, or triple unit failure.
Also might mention that when meat goes on sale you will be able to save her lots of money by buying lots of it...
Thanks to everyone for the info. This forum is great!!! Wife's birthday is next month and she wants a digital camera, so ...... win, win, I'll be able to order some apricot and hopefully figure out how to post pictures of the que.
Dave
I've got a friend who's wants to get rid of an apricot tree this spring. Tree is healthy....just planted in the wrong place years ago. I've never used this wood and want to order some to try before committing to take the tree....wood for labor type deal. Looking for a reputable source on the...
Josh,
Thanks for sharing this idea.
There's a company named tee-jet that makes stainless nozzles and nozzle bodies for ag applications. Some of them are adjustable so you could direct the spray to different areas inside the coker with a fixed nozzle body location. There are also optional...
Welcome Nick,
Congrats on your first smoker. I'm sure you will be turning out great q in no time.
Spent a year at TTU right after high school during the 70's. GPA was 0.034....Guess I should have gone to class, but I was too busy learning about life and ladies.

Whether or not you use the water pan is up to you. I always used it at first thinking that the water would absorb extra heat from a fire that is too hot and give up heat from a fire that is too cool and that is true to a certain extent, however I just couldn't see 5lbs of water making a big...
Rodney, Congrats on the new smoker. I had one of the earlier models when they were made by New Braunfels. What I would suggest doing on this first run, especially since its Christmas Dinner is to test your thermometer with boiling water test and then place a shelf as close to the level of the...
Hello all. Stumbled onto this forum a few days ago. I've already learned alot from you guys. Finally got all the kiddos raised and now am hoping to devote more time to my q. Being a native texan my favorite things to smoke are brisket, sausage, pork ribs, and chicken. Mesquite is my favorite...
