    My birthday dinner

    Been working on my chicken. Also tried a new recipe I saw on Diners, Dives and Drive-ins. Fried cabbage, onions, bacon, all mixed in with egg noddles. Really good! I will be doing it again. Chicken turned out good, too!

    butcher bbq injection

    Anyone have any experience with this? I plan to inject my brisket tonight with this, mixed with chicken broth, garlic powder and my rub, run through a coffee grinder. Any hints or suggestions would be appreciated.

    Made some BB bacon

    City BBQ

    The city had a BBQ for contractors, council people, etc. My buddy Rob and I cooked. About 40 people to feed.     1st comp chicken

    And I was really pleased with it. Cooked halves and they turned out well. Took 2nd place, and I was happy with the taste and moisture. Next time, I'll use some toothpicks to hold the skin down, but other than that, I'll stick to what I got!

    Gone a couple of days..

    and competed in my first cookoff. Comp consisted of brisket, ribs and chicken. Took 2nd in chicken, 4th in ribs and brisket. Had a great time. Here's a pic of my turn in ribs. I did replace the top rib with the dark spots for a better looking rib.

    Grilled chops today

    Had a bone in loin in the freezer, and a package of sirloin chops. Cut the loin, and added the slices to the chops. A simple marinade of soy sauce.     whole hog

    It's mostly beef...

    Needed a brief change from brisket, ribs, chicken. Went gourmet with a smoked bologna, burnt ends and a few mild sausage links. Daves beans, some sauteed veggies, and I had a meal!

    where's the beef?

    Thought I had some beef ribs in the bunch, but they turned out to be all pork. Had enough for a feast. Smoked in my BWS with hickory. My wife had plenty to take to work and share with her friends. Cornbread salad was mighty good, too! Back on the diet Monday.......
