    Thank you. My next problem, I hate when i read things to late, how important is it to separate the skin from the meat before brining or after for that matter.

    Whole bird. I have a 3.5gal bucket with lid to brine over night.

    I used apple wood chunks for the smoke. From what i have read the fruit woods are the better choice. Do you agree with that? Again, thank you for all the advice. This forum has been a big help
