Okay so I live in a condo and I'm looking for a really small slow smoker for my backyard. (actually its just a big field that I'm not technically supposed to use for grilling but....) Any of you guys know where I can buy such a smoker? I'm talking small. Something smaller than an ECB.
One word....HORRIBLE!!!!! I dont know who talked me into it, but using fat free CC was absolutely disgusting. It tasted like burnt rubber!
Oh well, no more skimping for me. My next batch of ABT's will be stuffed with cream cheese/cheddar and wrapped in double extra fat bacon!!!

Anyone with an ECB had any success using wood only? My first effort was unsuccessful because I was using moist wood that kept creating billowy white smoke. I also could not get the temp up past 175 and that was without a water pan. Anyone have any advice?
I'm smoking shrimp for the company thanksgiving feast. I just realized that one of the reasons that my last batch wasn't spectacular was that I filled the water pan. The steam is probably not good for helping with that brown color I'm looking for, but I dont want to dry the shrimp out. Anyone...
