Cold Smoked Tri-Tip and Sous Vide

Thanks for that, WHB!  I'll try to catch up. ;)  (See, I used an acronym.) Oops! No R/S or TT.  I figure TT is tri-tip. Pat

Cold Smoked Tri-Tip and Sous Vide

Thanks! Is there a sticky for acronyms?  I'm in military, aviation, automotive, and cooking forums that all use acronyms that sometimes cross contaminate and are totally undecipherable by me.  That means that I have no idea what R/S TT is.  I only learned AMNPS a couple of days ago and I'm...

Cold Smoked Tri-Tip and Sous Vide

On a recent trip to Phoenix my wife found the Chef'Store in Tempe.  She ended bringing home 6 tri-tips.  So, I have a lot of tri-tip cooking to do. ;) The other day I got my new A-Maze-N smoker so I tried to figure out how to smoke the tri-tip...and use our sous vide oven.  I decided to cold...

No. I'll brine one for Christmas. I barely got the bird defrosted in time for the fire. Pat

It's just that I want to get back to using lump hardwood charcoal again. Pat

I think I over smoked it a bit. I have a little tannin aftertaste. My wife though the white meat was fine. I'll try it tomorrow for lunch. It took me awhile to figure out how to get smoke in a Webber gasser. Now I think I'm over doing it. I'll have a real smoker soon. Pat

Being a newcomer, I thought I should post a Q-view as an introduction. I had planned to post a rotisserie chicken I did a couple of weeks ago, but I made a rookie mistake and forgot to remove the warming basket in the Weber Genesis grill. When I took the bird out, the basket had knocked off the...

    Cooking background/training

I forgot one of the "Real Men Can Cook" moments. In High School, the Shop and Home Ec teachers came up with the idea to swap students for one 6 week period. The girls would learn basic wood and electrical work and the boys would learn to sew and cook. Everything was done from scratch...

    Cooking background/training

Great thread! Initially, my mother got divorced when I was 11 and enjoyed the "single" part of being a single-parent more that the "parent" part. My younger sister and I got tired of eating TV dinners and canned soups so I branched out into making the Chef Boyardee meal kits. The pizza kit...

WonderBoard! Great idea. I used some leftover Terracotta tiles after the first fiasco. The Ipe deck won't burn, but I can use it other places. Wow! And this is only day-one. Thanks all. Pat

Tell that to my old deck. Those sparks did a job on it first time out. I've got an Ipe deck now. Good point. I've already got a genny, but listening to it for 8 to 12 hours, that's the last nail in the coffin on electric I guess. @ BA_LoKo Well, I've done lots of smoking in the past. Just...

Thanks, Debi. That's why I was looking at the Rival electric (or any electric) so I wouldn't have to carry large bags of chunk charcoal. Of course, like dog food, I don't have to bring the whole 40 lb bag, so my options are still wide open. I'm wondering though, in "no open fire" areas, if...

Will do, thanks. I was just looking at your menu for you bud's 50th. Clearly this site isn't all about "smoke". Good stuff! Pat

We're looking at a Casita 17' TT. I'm interested in boondocking as much as possible. We're just arguing about the floor plan. On another site, someone posted a pic of a Class A pulling a Casita. I guess it was for the "help". Pat

Great site; lots of great information. Weâ€8482ve had a 22†Weber Kettle, Smokey Joe, and Char-Broil Water Smoker for many years. The smoker rusted out and we dumped the 22-incher for a Weber Genesis natural gas and the SJ is on loan to my father-in-law. I wish Iâ€8482d kept the 22-incher...
