I let the chicken go for about 6 Coronas (2 hours) before finishing them on the grill and glazing then with the sauces.

I just bought a Pit Boss Pro 1100 this morning. Like you, I never had a pellet smoker. It was always my UDS and MES. The UDS is at the campsite and the MES took a crap after 10 years of service. I’ll let you know how I make out with it.
So it took me a little while to respond, but pickle buckets work great. I know I posted this 10 years ago, so I don't think I have the pictures of that turkey smoke anymore, but I never had any bad taste from using them as brine buckets. I used them a lot and have since graduated to frosting...
Store in a sealed food saver bag and heat the bag in boiling water, or use the microwave at 50% power, taking out frequently to stir it. After it's reheated, I drizzle it with Soflaquers finishing sauce. Just as tender as the day it was cooked.
