I need help. Third run on my mini wsm and I can not figure out how to keep the temp in the 225 range. I have a SJG, charcoal basket, 12" terra cotta dish as a diffuser, using blue kingsford. I start with a full basket mixed with hickory chunks and a can to hold the place for started coals. Use a...
Finally getting around to building my mini and have a questions about the lid. I am using a SJ Gold with an Imusa pot so I am having to adjust the top of the pot for the SJ lid to fit. My questions is with all materials cold how tight should the lid fit? I know I am probably over thinking this...
I am sure I should know this but....I recently bought some ribs from a friend that raises hogs, when he delivered them they had been cut into individual ribs(no longer a full rack). When smoking whole racks I use the 3-2-1 method. Should I alter cooking method for individual ribs? Thanks in...
I've got a smoke hollow 4-1 with extended chimney and charcoal basket. I put 1 chimney of unlit charcoal in the basket tightly stacked on one end. I lite 12 bricquets and let them ash over then put them in one corner of my unlit charcoal, neatly stacked. Exhaust 3/4 open firebox damper oly 1/4...
I apologize if this is in the wrong section but I am talking baby backs. Doing a party for the 4th. 18-20 adults and around 6 kids. Appetizers will be out all day then plan on doing a brisket 16# raw weight and 6 racks of baby backs with several sides and also hot dogs for the kids. I think that...
So I got a new smoke hollow 4 in 1 from sams the other day. Today is my third smoke on it and I can not for the life of me get the temp to regulate. I am having 30-40 degree temp swings. Does any body have any tips or advice on this smoker, or smokers in general to help me regulate the temp? The...
So my wife said she wanted some good smoked chicken so... 5 lb bird injected with Cajun Injector Butter Creole. 1/2 can of Bud in its butt and on the smoker at 300 degrees. I was shooting for 325 but for some reason couldn't get above 300 oh well. Just a little over 2 hours in the smoke and it...
So it's been a while since I have been around. I have a few days off work so thought I would try a brisket. I have been doing ribs and pulled pork for a few years with great success but this is only my second brisket. The first one came out well cooked (very tender with a good smoke ring) but...
I have now smoked 2 briskets. The first one I did I did not cook long enough, and although it had good flavor it was tough. Ok this is an easy fix. So this past weekend I did my second brisket. It was almost 8 pounds, cooked for 13 hours at 225-250 on my propane smoker. I used a home made rub...
It is a great day here in TN. 2 pork shoulders went on at 8:45 and the tbs is going good. Just waiting on 12:00 so the adult beverages can start flowing.
By the way, how do folks post big pics in there post. All I can figure out is how to do attachments?
I am cooking for around 15 people thursday and have a few questions:
1. I have 3 racks of baby backs and 2 shoulders(total of 14 pounds) plus sides, do you think this will be enough? Or should I only do 1 shoulder and get more ribs? I figure 3 or 4 ribs each plus sammie and sides should fill...
Where do you get the best results in a upright smoker?
It seems to me if you put the meat low it is closer to the water pan and would stay more moist, but if you put it higher in the smoker the heat and smoke would be better there since heat rises. Just looking for different thoughts on that.
I am in the early stages of thinking about a "big boy" smoker. I have been looking at the Lang 60 and the DPP Fat 50. I would like to know everyones input on these and any other smokers close to them in size and price. I am looking for one small enough for just me and my wife but large enough to...
Id like to say hello to everyone and introduce myself. I have been smoking on a gas grill for about a year and couldn't stand it anymore so bought me a bbq grillware vertical propane smoker the other day. I have a new love now, my wife is afraid its going to take her place. I have gotten alot of...
I am new to the forums and man there is some great information on here. I have a quick question for everyone. I have been "smoking" on a grill for a while and just bought my first real smoker. I have read on here for ribs it takes 5 to 7 hours for a good out come, does the time change for the...
