    Looks Geat, Rich! I'm doing a home-cured ham myself. I'm not sure how long that puppy's gonna take though. I figure to start it around 10 pm tonight and see what my temp is in the am. I'll be using my electric Smokin' Tex 500C that tops out at 250 degrees..........not sure how much it weighs...

    Usually it's work that gets in the way but when life takes a hand! I hate when that happens!!! And I was gonna have a flag made with a pig hoisting a beer with one arm and cradling a football in the other. I'll get over it. It's not like I'm not smokin' every other weekend anyway!

    Nice job on explaining the bacon process, Debi. I suspect that my bellies weren't dry enough......Got a call from the meat locker. They're gonna smoke one of the hams and one of the bellies so I'll pick up everything in a few weeks........

    Just stumbled on this site the other night and am thrilled to find such nice folks doing the same type of stuff I love to do! Smokin' - yeah, lots of people doing that, but add in sausage making and homemade bacon and musical insturments, Dang! Feel like I was adopted and found my real family!!!
