    mes mailbox mod

The shelving that I bought I actually found at Target and is a 5 shelf one that was a little less expensive than the ones at Lowes and actually rated for more weight. Mine went through severe wind and thunderstorms last night and did not budge at all and it is not anchored down at all. The roof...

BBQ This weekend, need to figure out how to get everything done.

Well, unfortunately getting things done days ahead of time is not possible because life and work intervene. I have found that with ABT's they are just better fresh out of the smoker. I did not like them after being refrigerated. Beans are fine to do ahead I agree. The rest of the things I am...

    mes mailbox mod

Thanks for the info. My mailbox does not seem to have much of a gap at the bottom of the door. May make some slightly larger holes in the bottom to see if that helps the airflow a little. Here are pics of what I have done. I trimmed the elbow going into the smoker to fit around the lip that is...

BBQ This weekend, need to figure out how to get everything done.

Sorry, let me explain a little better. This is actually a party for about 30-40 people, and it is not just ABT's and Fatties in there on the party day, there will also be ribs, beans, and a few other things, not to mention the pork shoulder and brisket where the times can be difficult to...

BBQ This weekend, need to figure out how to get everything done.

Normally I would be using the same smoker as the pulled pork, but I personally think ABT's and fatties are better straight from the smoker than letting them sit too long, and those are next on my schedule after the pulled pork and brisket are done so that will not work. The other thought on the...

    mes mailbox mod

Sorry to hijack, but I also have a few questions for Dave on this topic. I did the mailbox mod last weekend and seasoned it and everything. I did have to relight the sawdust once or twice but it works great. I noticed you put 3 1/2 -3/4 inch holes in the front door of yours. Would you recommend...

BBQ This weekend, need to figure out how to get everything done.

So I am having my 5th annual spring BBQ and this year I am down to 3 smokers instead of 4. My old ECB that I have had for 20 years has retired underneath the deck as it has finally rusted itself apart. I used it to do little things like beans or ABT's or fatties these last few years, but I am...

MES 40 bigger chip tray retrofit.

I own and use an AMNPS as well as I mentioned in my post and do love it, but would love to improve the functionality of the smoker itself in case I run out of dust or just looking for a quick smoke. I have had some issues with the AMNPS but I am sure those are mostly me and not the product...

MES 40 bigger chip tray retrofit.

Been away from these forums for far too long. Not sure why I have not been on as my passion for good BBQ still lives on, guess I just have not had the time. Anyway, on to the main topic here. I have an MES 40 that I have owned for about 2 years now. I love this thing for long smokes and use my...

Let me introduce myself, newbie from the east

I am from just north of you up in NH. You will certainly enjoy this forum and will learn a lot, I know I sure have. I have gone from 1 smoker to now owning 4 because of the things I have learned here.

I just can't take it anymore.

Thanks for all the great ideas. I am back out on the road for work so I have fired it up to season it, but not much more. I am hoping to get something in there when I get back. My original thought for the warmer months was to make a little wooden shed type thing for it and kind of attach or...

I just can't take it anymore.

So, I picked up my MES 40 from Sam's on Saturday. Everything was in excellent shape with no dents or anything like that as I have seen reported, and I swear they spend more time taping and wrapping everything than they do putting the whole thing together. Anyway, got it all unwrapped and put...

    Favorite Beer

Favorite beer is tough. My favorite beer I have ever had I cannot find in the US. It is  Slovak beer called Smadny Mnich. For beer I can get here, my favorite is probably Racer 5 IPA which is brewed in Northern California and I can only get it when I am out there on business which is about once...

I just can't take it anymore.

THat is more or less what I was thinking of doing, but I do not have that kind of overhang on my garage (which is attached under the house). I read in another post that it is necessary to keep the controller dry, which somewhat concerns me for bringing it outside. Also, I plan to have it on my...

I just can't take it anymore.

2 are charcoal and one is a gasser. The cold weather is not the problem with the gasser, the snow is. The way my yard is setup there are usually some really interesting snow drifts. This winter, I would not have been able to get to them, and probably at times probably wouldn't have even been...

    Very new to smoking

Welcome to the forum. Nice to see another fellow New Englander come aboard. I just came back to the forum after an absence due to depression from not being able to smoke due to the bad weather and cold. Good luck on the UDS. That is something I have always wanted to do and may at some point in...

I just can't take it anymore.

I live in New Hampshire and we have had a miserable winter so far. My smokers (GOSM and CGSP and a retired ECB) have been in the shed since November and I have been unable to smoke anything since. I have been to a few BBQ places, a coouple of them pretty good, but they are not satisfying the...

    Two Fatties Worth Viewing

I do a similar fatty but without the pancakes. I make mine with maple sausage and butter rum soaked apples. I really like the pancake idea though and plan on trying it soon. If I can ever get away from travelling so much for work, that is.
