Entered an ribs only contest this past weekend and ended up 2nd with 18 cook teams. Hot as the ****ens out but still fun. Trophy and $750 check was nice.

Been here nine days and have yet to find any bbq!! Did fine a Japanese place that advertised BBQ, but that wasn't bbq. Oh, well.....if anyone is interested I do see a business opportunity though for some good BBQ. You think it's hot where your at....I come back to the hotel soaked everyday...
Ok, got my drum for free..... I've looked at some of the other threads about building a UDS, but I still have one question. Is the ball valve the only air source or do you need to have more openings? I'll post some pics tomorrow.
Attending the 2nd contest for me in the upstate this coming weekend. It's a butt and chicken contest. I'm pretty happy with my pork but not as confident with the chicken. Tried something new the other day and it came out ok but not great. Going to try travcoman45's Slaughterhouse brine...

Talking with my son who said his company buys "NEW" 55 gal drums for storage of scrap. He told me he could get me one or maybe two. Hopefully he can come through for me on this.....I've really wanted to build one for a while!!

My son is doing a whole hog middle of June for about 40 people. What's your thoughts on how big of a hog to get? This will be the primary meat. I was thinking that 110 -120 lb hog would more than do the job. Other thoughts?
I was out on the internet and found the sidewalls for a 10x10 or a 10x20 straight leg ezup for $9.75 ea. If you've been looking for these, this I believe is a good price.
