    That is exactly why I moved from Northern Illinois down here to Eastern North Carolina. Too friggen cold up there. It was 72 here in Wilmington today. I don't envy you at all. Good luck .

    Ron, I agree with you. I never spritz nor do I foil and I have never had a bad butt. I like a bark that is not crisp but close to it. Seems to have morre flavor. Thanks for sharing.

    I have found the drum stick racks at both Lowes and Home Depot. They work slick either in the smoker or on the grill. The grub looks great by the way. I think I'll do some chicken this weekend. Thanks for sharing.

    You are right packplantpath, Lundy's is in Clinton NC, had been bought by Premium Standard and is now owned by Smithfield Meats. The quality is good and you can't beat $2.99/lb for BBs. I drive by the plant all the time and am considering a raid on one of their trucks.....lots of good meat there.

    Welcome aboard......This site will only make you want to smoke more and more. I sit at work reading the forums and try to figure out my next move. Too many choices and they all sound great. For starters, try Dutch's Wicked Baked Beans.....by far the best I have ever had. Oh yea !!!

    I'm with you Gooose. I spent 26 years about 70 miles west of Chicago....the winters really sucked. Moved down to the East Coast of North Carolina....This is much more tolerable.

    What's your occupation?

    I am an assistant plant manager for a major canner of sweet potatoes, green beans, carrots, greens and dry beans. The only downside to this occupation is there is not enough time to do as much smoking as I would like to do.....WORKING TOO MANY HOURS!!! Hours I should be smoking.

    Vlap, what is in Everglades Seasoning? I have some nice Redfish Fillets in the freezer and usually blacken them but you all have made me reconsider my options. I might try the Italian dressing but am always looking for good recipes to add to my collection. This web site is loaded with them! Thanks!

    Sanity check.....

    I agree with RIP. I put on a rub, fat side up on the ol'Brinkman shut the door and leave it for 10 hours for an 8# butt. I have never had a bad one, always get a great bark and the meat is so tender and juicy. Best piece of meat money can buy.

    Boston Butt size

    I like to smoke around an 8 pounder and it is usualy done in 10 hours. The butt to me is the best cut of meat that the family likes. It is really teander and juicy with the great smoked taste. I'll take a butt over a good steak any day. I might have to try the 4# size and see how it comes...
