    Well smoked my first fatty today along with some more 3-2-1 spare ribs, both came out excellent. I stuffed the fatty with Boscoli olive salad and feta cheese and it came out great. All ready decided my next fatty with be of a jambalya(sp) flavor. I also did 3 racks of spare ribs, trimmed...

    Same here in Texas, it's HOT....but since my first 3-2-1 ribs came out so good last week I'm doing some more tomorrow, plus my first fatty stuffed with olive salad and feta cheese.

    A slicer will work just fine, I bought a cheap one that I use for jerky, I still freeze it to get it stiff, it's easier but not mandatory.

    Thanks for the suggestion, that would work better than drilling holes. I will probably get some thinner steel to do this with, the grate that came with the smoker is pretty thick stuff.

    Yea, that's exactly what I did and used a brick to support it at the smoke stack end.. I haven't drilled any holes in it yet but I think I will before the next smoke this weekend. The temperature was actually hotter on the smoke stack end than it was on the firebox end. I already have a grill...

    Thanks for the comments. Had the ribs for dinner tonight and we really enjoyed them......the 3-2-1 will be the standard procedure at this house. Oh yea, from now on there will be a beer in all of my pictures.

    Thanks, I got it on Thursday, seasoned it on Friday and Friday afternoon did 2 racks of spare ribs. No the rack really wasn't big enough to score, it was one my son had shot a couple of years ago.
