One question I have is once I get the surface rust off the smoker, how do I go about painting it black and what paint to use?

1971 Chevy Stepside BBQ Trailer build thread...

You can read the story hear and see the pics. I am taking a friend's badly cut up bed and frame from his '71 and installing an old smoker. Bwhind that will be the short bed [5' long] intact to carry wood and camping gear. I picked up the old smoker yesterday...

    Salmon...there's the rub!

I got a bunch of nice comments about my smoked/grilled Salmon on T-day. Here's what I did... First I made up my favorite brown sugar rub, but instead of chili powder, I subbed in Old Bay seasoning. Then I covered the Salmon filets. This sat this way for a couple of hours in the fridge. I got...

    Smoked Tuna

I love Tuna steaks....here's a twist. Grill them first on both sides for about 90 seconds each right on top of the hottest part of the grill side. Then move them into the smoker for about 45 minutes as far away from the fire as possible. Applewood is very good for this one.

what does 'your smoking area' look like?

Here's mine....got two ECB's, a Brinkmann w/sfb and a tower smoker from Smokin' Joe's in OK [best one I own]. I built the deck specifically for BBQ and will be covering it this winter with any luck. I used an old truck tool box [homemade] for my BBQ box....carries all the goodies for smokin'!

Do you keep your smoker covered when not in use?

All three of mine are on a deck dedicated to BBQ. Right now they remain uncovered and the old one, an Oklahoma Joe tower smoker, has surface rust on the firebox. I wasn't the original owner and I have yet to cover it or restore it. I traded an old Coca Cola box [that was given to me by a client]...

    brinkmann smoking'n grill

I've got one of these and have already made two mods....I replaced the thermometer with a good one and left the original hole open for more air flow and drilled 15 holes in the charcoal pan for better air movement below the coals. I use this little smoker [I've got three] for quick smoke-cooking...

    Brinkmann Smoke' N Pit w/sfb

I just got one like yours this last spring. I've been wanting one for awhile. This one is my favorite for doing burgers now cause I can remove the water pan and mark the meat a bit with the flame from the fire box. I didn't know much about modifying these smokers until I found this site...I may...

    Hamburgers

First thing I ever smoked on hickory was a burger. I put mine in the smoker side on the top shelf for about an hour at 225, then mark them good on the grill side [Oklahoma Joe tower smoker] over an open flame [1-2 minutes per side depending on how hot the fire is]. Sure do love the flavor of...

    BBQ fanatic in Terrell, TX...

My name is Kelly Hanna and we live in Terrell, 30 miles east of Dallas. I was in the restaurant biz for many years, a few of those as a self taught chef in two four star houses. I left the business when I realized I no longer wanted to own one and started my own deckbuilding company. We build...
