    Rare to med/rare, complete opposite of my SO, who is Well Done - no pink whatsoever. This keeps us from going to some top end steak houses, cause she can't see paying $25-30 for a Well done steak, and usually when you say well done they try to butterfly it.

    Yes, also interested in the regulator mod? The only way I have been able to get 200-225 is to only open the propane tank 3/4 of a turn, then using the GOSM to fine tune.

    So, as I cooked my first 5 slabs of baby backs on the same GOSM, the temp gauge was at a minumum of 250-275, with it set to low. So, if I cook accordingly, the lower rack should be at a good 225-250'ish?

    Nope, don't wanna re-use it ( although I'll bet the drippings would make a great gravy for something, depending on the rub). Just being new to Q, not sure how much drippings might influence the flavors below them. Guess some of it is common sense. Like - thinking of doing a fatty with my ribs...

    Probably a newb question, but couldn't find a good answer in my searches. Is there a good way to catch drippings, say in a 3 rack smoker? Where you are doing multiple types of recipes, and you don't want them mixing together, dripping on each other. I'm sure you wouln'dt want to do alum foil...
