    pre soaking??

Yes, you can soak the peppers in Sprite (use diet so they dont' get sugary).  I usually soak them overnight if I know my pepper is really hot.  I can eat jalapenos no problem and have made ABT's for a couple of years.  Then all of a sudden the peppers I was buying from my grocery store, started...

    Beef for Summer Sausage grinding

Why not use pre ground beef and then mix it up and stuff it? I know you don't know what goes into it but would the final product really suffer that much?

    Beef for Summer Sausage grinding

Hi All, I am going to be making some Beef Summer Sausage. What is the best deal for beef to grind?  I found a Chuck roast for around $2.59lb. Is that a decent price?  Are there better cuts that I can use to make a good Summer Sausage? Is it best to go to a place like Sams to buy it, are the...

    GOSM Minion and Vents

I'm afraid that if I don't have enough (I use lump charcoal) that it will defeat the purpose of using the minion method and not last that long. Am I using too much lit charcoal?

    Smoke deer back strap

I've done a backstrap before on the smoker. DO NOT overcook it, as mentioned, its very lean but you CAN have good results with it. I rubbed with EVOO and salt and pepper. I then took whole garlic cloves and cut slits in the meat. I let it sit with the garlic overnight and then smoked it to med...

    GOSM Minion and Vents

Hi All, I recently got a new GOSM from a friend.  I have done a few smokes in it and love the charcoal flavor. I previously had an electric. I tried the minion method and the thing sky rockets to over 300*.  I can do the normal charcoal method and maintain at optimum temp. I have a wok with...

    Meat Grinder Cleaning

When I talked to Waring, they said that it was not safe to use anymore. Hmm, do they just want me to buy the new parts?

    Meat Grinder Cleaning

PS, the product is actually made by Waring. The replacements parts are on their website but are quite expensive. Gonna cost me about 90 bucks or more to replace them.  Hopefully a call to Customer Service will help me out.

    Meat Grinder Cleaning

I accidently did the same thing with mine. Its a lost cause to get it back to the shiny state it once was. I have been able to get most of the black off with a combination of boiling in cream of tartar and making a homemade aluminum polish. I am still afraid to use it again. I am hopefully...

    Oxidation on pots, pans, etc

Anyone have any resources to fix the pollished aluminum oxidation as mentioned above? I was an idiot and on my second run with the Cabelas Pro Grinder, put the hopper in the dishwasher. It came out looking terrible and grey dust everywhere on it. Can this be restored somehow? I already placed a...

    Best Snack Sticks

Hey all, I'm going to be making a bunch of snack sticks this deer season.  What is the best snack stick out there?  I have made Cabelas snack stick (the "Hot" one). It was very good and would buy it again.  Since this is the only one that I made, I was curious if there is a better one out...

Weber Customer Service - My Story

I worked for a hardware store in college that carried Weber grills. By far the best Customer Service company. They have awesome coverage on all of their products. I have a Weber Q that I also bought in college, it will be time to upgrade soon as I have a family now. I cannot recommend Webers...

    Snack Sticks in ECB

Has anyone done snack sticks in an Electric ECB? I replaced the normal element with a single burner that has a control knob with a cast iron pan on top. I tried it the other day and could get the temps up to 130* in 15* weather with 20 mph winds so on a normal day, I think I could get to...

    Snack Stick Curing

Awesome, thanks so much for the help everyone. I read the directions a while ago on my kit but I am still waiting for my grinder and sealer (they are on backorder from Cabelas) so I haven't rechecked them. It makes sense that the cure will stiffen everything and I am using my grinder to stuff so...

    Snack Stick Curing

Hi All, I am making my first round of Snack Sticks. I bought a kit from Cabelas with callogen casings and mix. My question is, do I grind and mix the ingredients and then cure overnight followed by stuffing or do I grind, mix, stuff, cure and then smoke?
